Chicken Pot...Chicken Pot...Chicken Pot Pie!!!

Craig and I decided that one day a week we will take turns making a brand new recipe for dinner. I went first and made a homemade Chicken Pot Pie.

This might look a little familiar to those of you who follow the same blog as me...

Anyway-it turned out great and here is the recipe!!!

Ingredients needed:
Pie crust, flour, milk, chicken broth, butter, chicken and veggies of choice.
Wine is an added bonus.



You can use either already cooked chicken, or boil your own.

Be sure to wash your veggies if you're not using all frozen.


Ack!!! Next time I'll buy pre-cooked chicken instead of boiling it!!!


Whew! He didn't see...he'll never know...


Ok...gonna need more of this...


Cut up your veggies. You'll need 2 cups of veggies for 3 chicken breasts. 3 cups of veggies for 2 chicken breasts.


Note-this is what 'not fully cooked' chicken looks like.



There we go...


In a sauce pan melt 1/3 cups butter.
I used Parkay and browned some onion as well.


Add 1/3 cup flour.


1/3 cup milk


1 1/2 cup chicken broth.


Mix until thick, then add the veggies and chicken.


Let it cook on low heat for about 10 minutes while you prepare the pie crust.


Add the veggies to the pie crust.


Cover with another pie crust. Slice a few holes in the top for air.



Cover in foil and cook for 30 minutes.


After 30 minutes, take foil off and cook another 10 minutes, or until flaky brown.


Ta-Da!!!!

Bridgett

Ode to Bridgett

Did you ever have a dog that meant the world to you?
That would be my Bridgett.


(All good pictures are in Tulsa. These are what I have here. I will post better ones soon)


We had Bridgett from 1991-2003. She was a pound puppy that had been abandoned on the doorsteps. Elaine Lee, founder of Animal Rescue Foundation (ARF) in Tulsa, saw Bridgett's little shaking body in the cold cage and instantly had to save her.

Unfortunately, Elaine had a tendency to do this a lot and her husband had told her no new dogs.

Elaine did not want to upset her husband, but she also did not want to leave this scrawny, malnourished, scared little puppy in the cage. The solution? Elaine took Bridgett and hid her in her clothes hamper until she could find a vet to take her.


She found a vet and they ran an add for Bridgett. We saw and went up to look at her. My Mother noticed she walked sideways. Come to find out, Bridgett had a broken hip and ribs that had healed on their own. At this point all we knew about this dog was she was under 9 months old, had been badly abused and had the sweetest disposition ever.

After a few surgeries and a story on the front page of the Tulsa World, we were able to take Bridgett home. Now the average Boston Terrier is 15-25 pounds. The day we brought my Bridgett home she was 6 pounds, had a cone around her neck and a hot pink cast on her leg. This was a special dog.

Though Bridgett had a rough first year of her life, we like to think that we made the rest of her life as enjoyable as possible. Bridgett was a true member of the family. She traveled from Washington DC to Canada with us. Bridgett was everywhere we were.

Yes this was taken in the 90's-hence the Dexters and high water jeans.

In the last years of her life she had different ailments, as most animals and people do. Her final diagnosis was in her heart. Our wonderful dog had an enlarged heart that lead her to have seizures. In the end, her large heart is what ended her life.

Bridgett is missed dearly by my family and by me. She is buried in my parents back yard in her favorite place to bask in the sun.

We miss you Bridgett.

Four Months and Counting

Four months from today I will be Susan Rowe


It's going to be weird changing my name. I'm the last of the Olsen Girls. I used to tell people I was going to marry someone with the last name Olsen because I wanted the name to keep being passed down.

I have already started to prepare for the name change. I've been practicing my new signature and initials. I think I have it down, but that darn cursive W is throwing me off.

I'm excited about the wedding! I think we're in coast mode. We've reserved almost all the big things. My dress is being altered, the invitations are in my living room, my veil is being fixed, we're making a playlist for the DJ...we're almost down to the finishing touches!!

In only 4 months...wow.

So...Jennifer Aniston has moved to Dallas!!

Jennifer has settled in Downtown Dallas. Though this will not be a permanent place to reside, she will be a for at least a few months.

She is in a great location with an excellent view of the skyline. She is also right on top of the water. I know she had to beat out a few other celebrity types for this place, so good for her for landing it!!

We love having Jennifer here! She is a huge asset to our community. I know I especially will miss her when she leaves.

So...how do I know all this about my Girl Crush?

Marion Barber

Marion Barber III was born June 10, 1983 in Plymouth, Minnesota
Marion went to college at the University of Minnesota.
He was the 4th round draft pick for the Dallas Cowboys in 2005.
Marion's Dad is a former New York Jets running back
His brother plays safety for the Houston Texans

Marian was nicknamed Marian the Barbarian for his running style. Jim Johnson, Philadelphia Eagles defensive coordinator has called Marian "The hardest running back in the NFL to bring down"


In 2007 Marian was named to his first Pro Bowl despite the fact he was officially a back up running back to Julius Jones on the Cowboys. Julius was not picked to go.
In May of 2008 Marian signed a 7 year deal, $45 million with the Cowboys with a $16 million guarantee.

The Bridge

Has anyone seen The Bridge?


This film is haunting me.
I have never had something affect me this way before.

The Bridge is a documentary about people who commit suicide by jumping off the Golden Gate Bridge. The filmmakers set cameras up and taped shots of the bridge for a year. They caught 23 people actually jumping, 2 people being pulled back and radioed in to police 6 people attempting to jump.

I really don't know if I would recommend for someone to watch this. It sounds interesting, but you are literally watching people die. This isn't like the manufactured Faces of Death. You actually sit and watch these people having their last thought. You are watching someone that is so down, so depressed, so low, so unable to know that tomorrow would be better that they hurl themselves into the ocean. With a splash-their life is over. That person does not exist anymore.

I will say-this movie did reaffirm my faith in God. For those of you who might see this-I won't ruin it. By no means does this have a religious statement behind it, but one particular part really spoke to me. And yes-there is a God who watches and listens to us.

If the purpose of this film is to make you think and realize truth-it succeeded with me. If you do watch-let me know. I am very intersted in what other people have to say.

Have I Lost You??

As you already know, I have been a bad blogger. I really don't have an excuse other than-wedding planning is a lot more intense than I thought. So to my once faithful viewers...I truly apologize.

So-where to start? My company has decided to block all websites that have my pictures on them to upload. So I'm stuck with only a few to select from. Let's go back in time a little. Have I ever posted the first picture I ever saw of Craig? Well here it is!!



Interesting, huh? For those of you who know me, I bet you're pretty surprised that this picture intrigued me. A guy with long hair, facial hair, camo shorts, a shirt that doesn't match and flip flops. Little did I know that this was my future husband.

Who knows what it was...but it worked!! I will say though-this picture was taken 7 or 8 months before we met. He had changed a lot by then! He still wears this outfit on the weekends-but it's a full beard now and better manicured hair. Mmmm...I love him.
